Our wineyards produce 2 kind of wine : one white, from "Chasselas" grapes and, as a red, a speciality : "Servagnin".
The size of our wineyards, a mere 15,000 square meters, does not allow us to transform the grapes ourselves. For this reason, this hard job is done year after year by Mr Henri Cruchon and his sons Michel and Raoul at our utmost satisfaction. 

WHITE WINE
The "Chasselas" represent the major part of our production. This white wine is typical of the "Chasselas" produced in the region of "La Côte".
It will suit perfectly with cheese fondue or raclette, with fish dishes, or simply as an aperitive. Best served chilled.
We sell it for CHF 8.50 a bottle.

RED WINE : SERVAGNIN

Back in the 1960'ies, Pierre-Alain Tardy heard about this old grape called "Vieux plant Salvagnin". This grape almost disappeared a couple dozens years earlier due to the fact that it produces about half of other grape such as "Gamay" or "Pinot Noir" produce. At that time, quantity was the word, so people couldn't afford to cultivate a grape with less output. Furthermore, it was harder to transform it into wine.
It then took 20 years to Pierre-Alain to find this grape (which he eventually found in a backyard), make it grow and multiply until he could have the first bottle.
At the same time, in the sixties, the "Canton de Vaud" was looking for a brand name to counter the success the "Canton du Valais" had selling his "Dole" and "Goron". The canton asked St-Prex if they could use the name "Salvagnin", which came from that region. This request was easily accepted as no winemaker were producing it anymore at that time. Since then all "Salvagnin" made in the "Canton de Vaud" has to be a "Gamay" or "Pinot Noir" grape.
For that reason, our red wine is now called "Servagnin", thanks to Mr Cruchon's and Apamo's work.
We sell this wine for CHF 19.- a bottle.
